Cabernet Sauvignon 2013

There are expectations of Napa Valley Cabernet. A specific set of “RULES” must be followed. The grapes must be picked at a certain sugar range, fermented at the exact temperature for a certain amount of time, and rest several months in the perfect combination of oak barrels. We follow all of the rules, except we break the one rule most wineries won’t… the price.

WINEMAKING: Add the 2013 vintage as another stellar harvest for the Napa Valley. The drought in California has not been hindering the quality of grapes but only intensifying them. Our cabernet grapes were picked in late October at optimal ripeness. We crushed and then slowly fermented the juice to get a perfect wine for you to enjoy. The Rule was aged in 100% new French Oak, blended with slight amounts of Merlot, Petite Verdot, Petite Sirah and Zinfandel to round out the finish, before it makes its way to its final home, the bottle.

TASTING NOTES: The 2013 Rule features strong aromas of Cherry, Tobacco, Currant and Vanilla. On the palette, the round tannins grip your mouth leaving you with mocha vanilla and a dark berry finish that will not quit. Of all of our Rule offerings, the 2013 may have the most age ability but don’t hesitate to enjoy it sooner.

FOOD PAIRINGS:The 2013 Rule will pair elegantly with robust and hearty dishes like wild game, pasta ragout and dark chocolate desserts.
